Based on the information you have provided us regarding your home occupation, we find that there is no need for you to obtain additional wastewater allocation for the property nor for you to install a grease trap at this time. Please see below for responses. What you will be producing (food, beverages, types, amounts of oil, etc.) -- We will be producing Momos (Nepalese dumplings) and they are steamed so we won't be using oil at all except for what we use to grease steamers (kind of like the bamboo steamers but ours is steel) so the momos doesn't stick to the steamer. How much you will be producing (average amount per day on day when you’re producing) -- We will be cooking about 400 dumplings on day we are cooking. What the process is (what will go down the drain, is food to be fried, etc.) --- As mentioned, momos are steamed. We bring water to boil in steamers and steam momos so the things that will go down the drain are just the soap and water when we do the dishes and some oil that we use to grease steamers. Do you have an estimate of how much water this will use on a daily basis? --- The steamers holds about 2 quart of water which we bring to boil to steam so we will be using about 14-15 quarts of water including cleaning of the dishes.
